Peanuts are very common nuts all over the world.because of the high nutritional values peanuts are used as dietary source.
Peanuts are belonging from beans family.peanuts are similar in taste as well as nutritional profile to Almond's,cashew nuts,Walnuts.The botanical definition of Nut is a Fruit whose overy wall becomes hard at maturity.
Peanut is annual herbaceous soft plant.
Peanut pods develops under ground like potatoes,
Peanut oil is used as cooking oil.this oil is mild in flavor and due to its high monounsaturated content it is very healthy oil,& it is resistant to rancidity.
Types of peanut oil:
*Aromatic roasted peanut oil
*Refined Peanut oil
*Extra virgin or cold press peanut oil
Cold press peanut oil is much demanding oil in market as compared to other types.
Parts of peanut consists of 
Shell( outer cover),cotyledons( two edible parts),seed coat( soft covering),Radical &plumule.
Chemical constituents:
Peanuts contains polyphenols,polyunsaturated &mono unsaturated fats,Dietary fibers,
It also contain Bioactive compounds,Antioxidants.
Peanut contains  Resveratrol,Isoflavones.
Peanut contains carbohydrates,calories,fat,proteins,vitamins,minerals.

Uses of peanuts:
*Peanuts are used in various sweet dishes.
*peanut oil is derived from dried peanuts which is also know as Arachis oil,this oil is used as cooking oil.
*peanuts are used in peanut butter.peanut butter is  sweet,creamy and full of protein sorce.
*peanuts oil is used in industrial use also like used in paints,varnish,lubricating oil,furniture polishing purposes.
*Dry roasted peanuts are common form of preparations,dry peanuts are usually used as snack.
*In India boiled peanuts are very famous snack .this peanuts are boiled in salt water and served with some chilly powder.
*Also peanut Chikki is very popular in India.this peanut chikki made with dry roasted peanuts ,jaggery and some salt.chikki is very tasty ,sweet and simple preparation.
*In India raw peanuts are used in some chutney.chutney made with raw peanuts,dry coconut,coriander leaves,chilli's,salt .
